There is something almost magical about seafood when you are near the water. It hits differently.Tastes fresher. It feels like it belongs to the place. I have always believed that nothing beats seafood by the seashore but the thought really hit me again last night when me and my Fiancé went out for dinner.

A New Home and a Rainy Change of Plans

We just moved to Morehead City in North Carolina. When I say just moved I mean we literally wrapped up our first full week here. We are all settled and wanted to enjoy a night out in the new town. Our plan for Saturday night was simple. We were supposed to go to a boating event. The weather had other plans. Rain came in heavy and parking was a nightmare so we changed direction and looked for dinner instead.

That is how we ended up at Prime Bistro Wine Bar. We did not know what to expect. We simply saw the sign and said let us try it. Sometimes the best nights happen when you do not plan them. Once we stepped inside we knew we made the right decision.

The place is beautiful. Warm lighting and a layout that instantly makes you feel comfortable. It is modern without feeling cold. It has character without being overwhelming. But the look of the place was not what sold us. What really won us over was the very first dish.

The Dip That Changed the Night

When I tell you this was the best one we ever had I mean it. We have lived in New York, stayed in Delaware. So We’ve spent some years by the seashore. We have ordered crab dips and lobster dips in so many restaurants that it almost became a tradition. But this one was different. Rich, creamy, loaded with real seafood and the flavor hits immediately. One bite and we looked at each other and knew. This meal was about to be special.

Service That Makes a Difference

Before I get deeper into the food I have to give credit to the staff. The waiter we had was incredible. Friendly, patient, and knowledgeable. He did not rush us, he walked us through the menu and explained each dish in a way that made you excited for what was coming. He also put us onto some great drinks. They had a Christmas special espresso martini that looked amazing. I went for the restaurant’s signature pomegranate martini, a bright and refreshing drink that balanced sweet and tart perfectly. It was the type of drink that makes you slow down a little just to enjoy it.

Then came the Main Event.

For dinner I stayed in my seafood lane and ordered the truffle lobster mac and cheese. I had been craving lobster all night and once that dip hit the table I knew I needed more. This dish came out looking beautiful and the smell alone had me ready. The pasta was cooked perfectly. The truffle flavor came through in a smooth and elegant way without overpowering the lobster. It felt rich but not too heavy. Every bite had that warm comfort you want from mac and cheese but elevated with real lobster and that touch of truffle.

My fiance went with an eight ounce steak and a medium double baked potato. This potato surprised me. I had never tried one before which I do not know how that is even possible. It was incredible. Fluffy, flavorful, cheesy in all the right ways and the perfect partner to a good steak. Her steak came out cooked exactly how she asked for it. Juicy with a good sear and a clean simple seasoning that let the meat speak for itself.

The kitchen at this place knows what they are doing. There is a confidence in the way the dishes taste. Not overdone. Not trying too hard. Just quality ingredients prepared by people who care about the craft.

Ending the Night on a Sweet Note

By the time dessert came around we were already impressed but the desserts put the final stamp on the night. I ordered the special of the night which was a pistachio cheesecake, it’s seasonal. I am a big cheesecake guy and I have tried a lot of them but this one was on another level. Smooth, creamy, real pistachio flavor and a crust that held everything together without crumbling apart. It was rich but not overwhelming. Every bite had you wanting the next.

My fiance ordered the creme brûlée. A warm dessert with a perfect caramelized sugar top that cracks just the way you want it to. The custard underneath was silky and sweet and the whole thing felt like the perfect finish to an already excellent meal.

As we sat there enjoying our last bites we went back to the conversation we had earlier. We both agreed that nothing beats seafood by the seashore. There is something about being close to the water that makes every flavor pop more. The freshness is unmatched. The air is different. The vibe is calmer.
